Ingredients
  

  • 1 onion
  • 2 cloves of garlic
  • 4 chicken breasts
  • 2 teaspoons of Cajun spice mix
  • 2 courgettes
  • 2 red peppers
  • 1 can of chopped tomatoes
  • 500 ml of chicken stock
  • A handful of sliced spring onions
  • A selection of fresh herbs

Instructions
 

  • Start by preparing your ingredients. Finely chop the onion and garlic, slice the courgettes and red peppers, and dice the chicken breasts into bite-sized pieces.

  • Heat some oil in a large pan over medium-high heat.
  • Add the chopped onion and garlic to the pan and cook for a few minutes until they begin to soften.
  • Add the diced chicken breasts to the pan and sprinkle them with the Cajun spice mix. Cook until the chicken is browned on all sides.

  • Next, add the sliced courgettes and red peppers to the pan and cook for a few more minutes until they start to soften.

  • Pour in the can of chopped tomatoes and chicken stock. Stir well to combine all the ingredients.

  • Bring the mixture to a boil, then reduce the heat and let it simmer for about 25 minutes, or until the chicken is cooked through and the vegetables are tender.
  • Before serving, garnish the dish with sliced spring onions and a sprinkle of fresh herbs for an added burst of flavor.
