Ingredients
  

  • Olive oil
  • Onion
  • Red bell pepper
  • Garlic
  • Chicken breasts
  • Bomba rice
  • Low-sodium chicken broth
  • Paellero seasoning
  • Canned diced tomatoes
  • Peas
  • Fresh parsley

Instructions
 

  • Start by sautéing the onion and bell pepper in olive oil until softened. This will help release their flavors and add a nice aroma to the dish.

  • Add the garlic to the pan and cook for about a minute. Be careful not to burn it as it can turn bitter.

  • Remove the vegetables from the pan and set them aside.

  • Cook the chicken in the same pan until partially done. This will give it a nice brown color and enhance the overall taste.

  • Remove the chicken from the pan and set it aside with the vegetables.
  • Add the bomba rice to the pan and toast it for a few minutes. This will help bring out its nutty flavor.
  • Stir in the low-sodium chicken broth and paellero seasoning. The broth will help cook the rice and infuse it with delicious flavors.

  • Add the chicken and vegetables back to the pan and simmer everything together until the rice is tender. This will allow all the ingredients to meld together and create a cohesive dish.
